Fall is here, and with it comes all things pumpkin! This recipe makes a perfect snack or dessert to satisfy your sweet tooth without the sugar overload. Packed with wholesome ingredients, it’s a delicious way to boost both fibre and protein.
Ingredients:
- 1 cup milk (or milk alternative)
- 1 cup pure pumpkin puree (no sugar)
- 1.5 tablespoon maple syrup
- 1 teaspoon vanilla extract
- ⅓ cup plain Greek yogurt
- ⅓ cup chia seeds black or white
- 1 teaspoon pumpkin pie spice
- Pinch of salt
Instructions:
- In a blender combine milk, pumpkin puree, maple syrup, vanilla extract, Greek yogurt, chia seeds, pumpkin pie spice and salt. Blend until smooth.
- Divide the blended chia pudding into 4 small glass jars (about ¾ cup in each). Cover and place in the fridge for at least 2 hours to thicken.
- Optional – top each with a spoonful of yogurt and a sprinkle of cinnamon.
