  • 5–6 cups peeled and cubed butternut squash
  • 1½ teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 6 cups low-sodium chicken broth
  • 2 pounds boneless, skinless chicken thighs or breasts
  • 1 can (15 oz) corn, drained (optional)
  • Juice of 1 lime
  • Sea salt and black pepper to taste

Instructions

1. Create the base

Warm oil in a large pot over medium heat. Add onion, bell pepper, garlic, and cilantro. Cook until softened and aromatic, about 5 minutes.
